Hot Cross Bun Recipe

I absolutely love baking and finding new recipes, so as it is Easter time, I thought I would make some Hot Cross Buns and they turned out pretty well, so I thought I would share them with you.

The recipe that I used was from BBC Good Food, but I changed a couple of things as I went along.

300ml milk
50g butter
500g strong bread flour
1 tsp salt
75g caster sugar
1 tbsp sunflower oil (I just used olive oil)
7g sachet yeast
1 egg, beaten
75g sultanas
1 apple, peeled and finely chopped
1 tsp ground cinnamon
75g plain flour
3 tbsp apricot jam

1. The first thing you will need to do, is bring the bring to the boil in a saucepan. Then remove from the heat, stir in the butter and leave it to cool a little bit.

2. Put the flour, salt, sugar and yeast in a bowl and add the milk and butter mixture. Mix with your hands and then empty onto a floured work surface.

3. Knead the dough for 5 minutes until it is smooth and elastic. Then put the dough in a bowl and cover with oil covered cling film (to stop it from drying out). Then leave it to prove it a warm place for 1 hour.

4. After you have left it for an hour, add in the chopped apple, sultanas and cinnamon. Knead the dough so that everything is mixed well together. Cover it back over and leave to prove for another hour.

5. Divide the dough into 10-15 pieces and roll each piece into a ball. Put buns on baking trays, lined with greaseproof paper. Cover again with cling film and leave to proof for one hour more.

6. Preheat the oven to 220 degrees celcius/ Gas Mark 7. Then mix flour and about 5 tbsp water and mix together to make a thick paste. Put into a piping bag (I used the piping tube that you can see in the picture above). Remove the cling film and pipe a cross onto each on the buns and then bun in the oven for 20 minutes.

7. Remove from the oven and leave to cool. My oven temperature was a bit too high, which meant that the buns burnt little, but they still tasted nice.

8. To finish, just brush them with a little apricot jam and they are ready to eat.
